The creamy emulsion is a deep jade green, the colour sought after by matcha enthusiasts. Its vegetal (snow peas) and slightly iodized notes, often found in teas from coastal regions, offer a balance of sweetness and vitality.
This matcha is produced in the region of Hadong from leaves harvested under under covered growing, as practised for the finest Japanese matcha. This technique encourages the tea plants to produce more chlorophyll and results in less bitterness in the leaves, giving the matcha greater smoothness and roundness.
