Our very first blackberry co-fermented coffee!
Fermentation: The anaerobic fermentation takes place in 200-liter tanks for 120 hours at a constant temperature of 18°C, with a controlled injection of $CO_2$ to create an oxygen-free environment that enhances the aromas. After depulping, the coffee undergoes a second 120-hour fermentation phase with blackberry pulp. During this stage, the beans are submerged in water and subjected to a thermal shock at 40°C. The water is enriched with wild berries, locking in the unique berry flavors and giving the coffee a complex profile.
