NEW PRODUCER!
Our El Salitre will captivate you with its notes of chocolate, grape juice, and apple. While these flavors are noticeable in espresso, they will be even more vibrant and pronounced when brewed with a pour-over or filter method.
A History of Passion and Innovation
In 2015, the Alvarado Fonseca family launched the Corazón de Jesús micro mill in Costa Rica's southern Brunca region—an area known for producing nearly 20% of the country's coffee. Today, Jhon Alvarado Abarca, a family member, continues this legacy of artisanal, high-quality production. The family is well-known for their meticulous processing methods and their commitment to producing traceable microlots.
A Unique Terroir and Precise Processing
This lot is made from the Catuai varietal, a compact, high-yielding cultivar developed from Mundo Novo and Caturra. It is perfectly suited to the high-altitude conditions of the Brunca region and performs exceptionally well with natural processing.
After harvest, the cherries are carefully selected and dried as whole fruit. This process enhances the coffee's body and sweetness while preserving its clarity. The result is a vibrant, intensely fruity cup that highlights both the terroir of Brunca and the precision of Jhon's post-harvest work.
